craft your vegan lunch... curry lentil soup

















i made some delicious soup the other day using everything in the fridge that needed to be used. sorry for the horrible pictures. our tongue and groove ceiling really soaks up the light at night.

here's the rough recipe. i say rough because i don't really measure when i cook. so everything is an approximate.

olive oil
fresh garlic
1/2 red onion
1 carton vegetable broth
1 bag lentils
about a cup of kidney beans
1 sweet potato diced
about 5 small homegrown tomatoes
a big handful of baby carrots cut in half
1 bunch of red kale (my favorite!)
3 big tablespoons Patak's Hot Curry Paste (my favorite curry paste around)
• i just found out they make an extra hot curry paste! i'm going to have to keep an eye out. ps. make sure you mix the patak's with some of the coconut milk or water so it dissolves before you add it to the soup and you don't shock an unexpected eater!!
some garam masala
some chilli powder
2 cans coconut milk

of course, use organic ingredients when possible. just add them all to the pot (olive oil, garlic and onion first, saute and then everything else), bring to a boil and turn down to a simmer. add extra water or coconut milk as the lentils cook if you need it.

i love it the next day after the flavors get a chance to meld.
